Originating on the isle of Crete, Kolokithokeftedes are now popular throughout all the Greek Islands and incorporate classic Greek flavors to delicious effect. Translating to ‘zucchini meatball,’ Kolokithokeftedes make a delicious and satisfying meal, especially when paired with creamy tzatziki. In the recipe below, traditional white flour is swapped for chickpea flour, making these fritters gluten-free and packed with plant-based protein and fiber. The Greek yogurt in the tzatziki also packs an impressive protein punch, offering bone-strengthening calcium and gut-protecting probiotics. Serve with a grain salad for a satisfying and well-rounded meal. These fritters are an excellent candidate for meal planning- make a double batch and freeze them to have a healthy, quick meal at your fingertips.

Fritter Ingredients:
- 3 large zucchini, grated
- 3 tablespoons chopped fresh dill
- 1 tablespoon chopped fresh mint
- 4 scallions, white and green parts, chopped
- 2 beaten eggs
- ½ cup crumbled feta cheese
- 1 cup chickpea flour (substitute regular flour if needed)
- 4 tablespoons extra virgin olive oil
- Salt and pepper, to taste
Fritter Directions:Â
- In a bowl lined with a dish towel, sprinkle the zucchini with 1 tablespoon salt, and allow to drain for 10 minutes while you prep the other ingredients.
- Wrap the towel tightly around the zucchini, and squeeze out as much excess liquid as possible.
- Transfer the drained zucchini to a large bowl, and mix with the dill, mint, scallions, egg, feta, flour, and salt and pepper to taste. Â
- In a large skillet over medium heat, add 2 tablespoons olive oil. Drop in the zucchini batter in 1 tablespoon size scoops, flattening slightly into a disk shape. Allow to cook for 3-4 minutes per side. Drain on paper towels once cooked, sprinkling with more salt while still hot. Repeat until you’ve cooked all the batter.Â
Tzatziki Ingredients:
- 1 cup unsweetened plain Greek yogurt
- 1 clove garlic, minced or run over a microplane
- ½ cup peeled grated cucumber squeezed dry with a dish towel
- 1 tablespoon fresh lemon juice
- 1 tablespoon minced fresh dill
- Salt and pepper to taste
Tzatziki Directions:
- Mix all ingredients well to combine in a small bowl, adding more lemon juice, salt or pepper to taste as needed.Â
